Vegetables going bad before you have a chance to eat them?

Use these storage tips to make them last longer.

Radishes


You will need:

  • cutting board and knife

  • quart size freezer bag

  • large paper towel

  • water

Remove the ends from the radishes and then wash them. Soak the paper towel and wring out so it’s damp, not dripping. Open the freezer bag and place the wet paper towel inside, so that it comes up either side of the bag, making a pouch. Place the radishes in the wet pouch and fold the ends of the paper towel over them so they are completely covered. Seal tightly, making sure to press the air out. Refrigerate. Not only will they last longer, but the prep is done and they are ready to eat.

Broccoli


You will need:

  • cutting board and knife

  • mason jar

  • plastic produce bag

  • water

Broccoli is basically a flower plant so treat it that way. Cut the ends off and place it in a glass jar with water. To prevent the cold refrigerator air from spoiling it, loosely cover the crown with a thin plastic bag, like the produce bag you brought it home in. If it’s a tighter fit, poke some small holes in the bag to let it breathe.

Cucumber


You will need:

  • cutting board and knife

  • quart size freezer bag

  • two paper towels

Cucumbers are mostly water so absorbing some of that water in a dry paper towel helps prevent it from molding. Wash cucumber and cut the ends off. Dry the cucumber and cut it in half. Roll each half in a dry paper towel to cover it. Open the freezer bag and place it inside. Seal tightly, making sure to press the air out and then refrigerate. Like radishes, not only will they last longer, but the prep is done and they are ready to slice and eat. Note: each time you pull it out to slice, remember to cover the cucumber back up in the paper towel and seal the bag.

Asparagus


You will need:

  • cutting board and knife

  • mason jar or small bowl (like a salsa or ice cream bowl)

  • water

Fill the jar or bowl about half way full of water. Cut the ends off the asparagus and set it standing up in the bowl of water. Place in the refrigerator until ready to cook.

Sweet Potato


You will need:

  • a cardboard box (size depends on amount of potatoes you have and how big they are)

  • newspaper or other lightweight packing paper

  • apple

Loosely wrap the sweet potato in paper. Set an apple in the box between the potatoes and. If there’s extra space in the box, add more paper. Close the box flaps. Remember to check on the apple every week or so and replace if it’s starting to rot.
