Maple Pecan Protein Balls

Enjoy the flavor of fall with these chewy maple pecan protein balls! Gluten free, milk free, and grain free.



Yield: 16 Balls | Serving Size: 1 Ball

INGREDIENTS


  • 1-1/2 cups almond flour

  • 3/4 cup protein powder, unflavored

  • 1/2 teaspoon salt

  • 1/3 cup organic coconut oil + 3 Tbsp

  • 3 Tbsp organic maple syrup

  • 3 Tbsp organic honey

  • 2 tsp vanilla

  • 2/3 cup organic pecans, halved



INSTRUCTIONS

Maple pecan dough with a blue spatula in a stainless steel bowl.
  1. In a medium bowl, combine the flour, protein powder, and salt.


  2. Add in the coconut oil. Using a fork, press and stir the coconut oil into a fluffy crumble so there are no clumps.


  3. Add the maple syrup, honey and vanilla, continuing to press and stir so it comes together to form a dough. Add in the pecans and mix until incorporated.


  4. Line a tray with parchment paper and scoop

    1-1/2 Tbsp of dough into your hands (you can also use a small melon ball scoop), rolling and pressing it into a dough ball.


  5. Place the balls on the parchment paper and set the tray in the fridge for up to 2 hours or until fully solid.


  6. Remove the balls from the tray and store in an airtight container in the refrigerator.
