Quick Quesadillas

INGREDIENTS


  • 2 grain free tortillas (for this recipe

    I used almond flour tortillas)

  • 1/3 cup dairy free shredded cheddar cheese, divided

  • 1/3 cup cooked grass fed organic ground beef*

  • 1/2 tsp organic garlic powder

  • 1/2 tsp organic onion powder

  • 1/4 tsp organic black pepper

  • pinch of salt

  • 2 Tbsp organic kidney beans



Yield: 1 quesadilla | Cook Time: 13 minutes*, 25 minutes


This quick quesadilla is gluten free, grain free, and milk free. It's packed with protein and can be a nice change from typical breakfasts (or lunch or dinner). You can even cut it up, stack the pieces in tin foil or a storage container, and take it with you to work.


INSTRUCTIONS


  1. This step can be done ahead of time or the night before if you want to make it as a breakfast or on the go.* Heat greased skillet over medium heat. Add 1 lb ground beef, breaking it up with your spatula, and cook for about 8-10 minutes. Add 1/2 tsp of garlic powder, 1/2 tsp of onion powder, 1/4 tsp black pepper, and a pinch of salt. Cook until browned and remove from heat.


  2. Heat another greased skillet over medium heat. Once warmed, place 1 tortilla in the pan.


  3. Spread half the cheese all over the tortilla and then add 1/3 cup of the ground beef and beans, making sure to spread them around evenly. Store leftover beans and beef in the fridge.


  4. Sprinkle the rest of the cheese over the beef and beans and then cover with the second tortilla.


  5. Let the quesadilla cook until the cheese is beginning to melt and the bottom tortilla is lightly browned, about 9-10 minutes. It's important to wait until the cheese begins to melt so it helps to hold all the ingredients in the quesadilla when you flip it.


  6. Flip the quesadilla with a spatula while using your other hand to guide it as you flip, being careful not to burn your hand. Brown the other side for 2-3 minutes. If you are making multiple quesadillas, you will need to add more oil to the skillet and lower the heat so the next tortilla doesn't cook too quickly and burn.


  7. Remove from skillet and place on a plate. Use a pizza cutter or kitchen scissors to cut the quesadilla down the middle in both directions into four pieces.


    Optional: serve with hot sauce.


    Note: The beef and beans can easily be replaced with cooked chicken or even canned

    chicken.
